Basil lime icecream

500 ml milk

250 ml whipping cream

25 g basil leaves

some basil flowers, if desired 

150 g fine granulated sugar

1 tablespoon of finely grated lemon zest

¼ teaspoon of salt

6 egg yolks ice cream maker + blender or hand blender

Requirements

 

Preparation

Put the basil, milk, cream, sugar, lemon zest, salt and egg yolks in a blender or purée the ingredients with a hand blender until a smooth mass arises. 

Pour the mixture into a saucepan and softly bring it to the boil until the sugar dissolves. 

Remove the pan from the stove and allow the mixture to cool off to room temperature. 

Then put the mixture in the fridge so that it gets really cold. 

Pour the cold mixture in the ice cream maker and follow the machine’s instructions. 

Serve the ice cream with fresh basil leaves and flowers.

Tip: very tasty with strawberries too
