Cornflower (Centaurea Cyanus)
Description
Centaurea cyanus, commonly known as cornflower, is an annual plant that carries flowers with an intense blue colour. The plant owes its name to the fact that it very often grows as a wild plant in (wheat or) corn fields. It demands very little of the soil it grows on. In order to stimulate continuity of flowering it is important that you remove withered flowers.
Use & Taste
With their beautiful blue colour and their neutral flavour, cornflowers can be used in all kinds of dishes, like (fruit) salads and desserts. The flowers are nice to sugar-coat and to decorate cakes with. In loose leaf teas the intense blue flower petals are used to add a nice colour.
Cornflowers taste mildly sweet, fairly neutral.
